The meat is thinly sliced, so it's soft and simmered until the fibers become soft, so it goes perfectly with rice.
Unique manufacturing method to remove excess fat
Although the tender loin and ribs contain a lot of fat, Tatsuya's unique manufacturing method creates a light and healthy finish.
By letting the broth cool overnight and removing only the excess fat that has solidified on the surface, we have achieved a light flavor while retaining the rich aroma of the fat.
The seasonings are carefully selected, and the traditional flavor is made with soy sauce, mirin, and Japanese pepper to create a slightly spicy, tender dish that is cooked until the beef fibers have loosened. Japanese pepper enhances the deliciousness of shigureni.
